I promise. Spring is coming...

We had some wonderful weather this weekend. Finally! We took a long walk in our woods on Saturday afternoon....We were looking for life!! We found it too!

And me...
The ground is saturated here, as it is in most of the country right now. We have a muddy mess ahead I'm sure. The temps are supposed to be in line this week, which should range in the mid 50's they say.


I already see some signs of spring...


And also some winter casualties...

But its all part of the process....Soon the cardinals will be replaced with the *birds of summer*.

Oh the birds are back, the birds are back, Oh the birds are back in town... Whoops, sorry. Got carried away there...

This week I want to talk about Mickeys favorite hobby.... I'll let you guess what that might be.
I also want to show you this process called plastic wrap...How cool is that?

Sunshine award!

I am so thrilled and honored that she did that!
She is an awesome blogger and just a terrific person. (Even tho we have yet to meet, I just KNOW it) .. She can bake and cook and has a bunch of fur kids. And like her name implies, she is hands down, one of the best Grandmas around!

Mom....Dont look!!!!


This is Dipstick...Yes, that is an odd name for a cat, but let me explain. When he was a little kitten, he went under a car or truck at our house, and the tip of his tail was oily. Hence, his name. Dipstick was born in our shop. His mothers name was Biggie. Biggie arrived at our house by my son who came back home to live after being out on his own for a bit. (It happens sometimes) We also inherited a black lab, and a race car that way. But anyway, things happen, like I said previously.
Dipsticks mother, during the process of feeding her little kittens, was bitten by a copperhead. She lived a short while but died. Tragic. Dipstick had a brother named Spot who was bit by a brown recluse spider and there was nothing the vet could do for him. Another tragic occurrence. Its the perils of country life.
Dipstick didn't seem to mind being the only *house* pet. Matter of fact, I think he really enjoyed it. He went in and out and enjoyed life in very pampered style. He had full run of the house and yard and shop and slept in bed. Then..life changed. Grandchildren arrived, as did other dogs and a cat and well, a zoo occured. Dipsticks mood changed. He is no longer the sweet loving kitten of by gone days. Hes cranky. He doesn't like kids. He hates Bob and doesn't dare go near the bed because well, its full of other animals now. Hes resigned himself to a life of being jealous and miserable, most of the time...

But then, there are times that he does this...


I love you, please pet me.


And yes Mom that is on the table. The kitchen table...I know what your thinking and yes I know that you would NEVER allow a cat on your table. Never...And it really bothers Mickey too. Hes trying to read the paper for goodness sakes!

And African violets don't like to be touched...or brushed against. They are funny like that.

But the animals seem to rule the roost here.

What dreams are made of ....right now...

Ok old man winter...I give...

You have proven that you are strong. I suppose a bit stronger than I.

The romance of a fire burning in the stove in the living room has worn off. Matter of fact, its been awhile. I'm dreaming of other things at this point.

I'm sorry winter. You can go now...Ive got other things to do.
There are flowers to plant...and hummingbirds that need to come back.

There are fishing trips I would like to take.....In warm weather, please.

Mickey and I love to go camping...And we would prefer it not be snowing when we do.


I would like to go to my Uncle Franks 3rd Annual reunion.. Its this summer..Hear that winter? Its in the SUMMER...


I would like to see the green green grass of home..

I would like to see my crazy grandchildren ride bikes down this road again.


As well as have a fire going outside to toast marshmallows.

And what about our red bud tree? Its wanting to put on its spectacular spring show!!!!


Like I said.
Its been real, kind of fun, but don't you realize,
I am DONE...

Why ask why...

Sometimes you just have to wonder...





Like....



Why do I use a tomato cage for a hay holder for the goats?





Why do I have a dog that likes to roll in dead dry grass and get it all over him?



And do it again and again...until.....



Until his hair looks like this...





Why do I think saving this dog was a blessing to me as well as her?

Even with all the puppy mill problems that still need to be worked out? Why is she so sweet and loving and I wouldn't give her up for anything??





Why did my brother go bald????







Why do two people meet and end up together for years and years.? And in my eyes he still looks the same?





Why do dogs walk into your life? From nowhere? And end up being so special there are no words?



Why did my mother decide to wear pop plastic beads for a school picture and it turned out beautiful like this?



Why did my Uncle Frank decide to start reading my blog? (I hear its true, I'm even in his *favorites*)



Why did this photographer decide to capture this particular expression of my dad? One that was truly him?



Why does this picture of two of my grandchildren with my very own grandmother always make me cry?


As does this of her sitting on a chair in her own yard... Just thinking..Just being...with me.


And why will this picture of Emma at my Grandmas table always be my favorite...ever....


Why did I choose a dog this big????

This weekend didnt go as planned

1. I didn't even start my tax work.



2. I am a 50 year old woman with old bones that ache when the weather turns.



3. I just wasn't in the mood, just being honest here...











First of all, Mom, here is a bird picture for you I took this morning..



I discovered a zoom on my camera that I didn't know existed. I am wayyyyyyy thrilled...This was one of those I took when I discovered it.

So anyway, on Saturday I just did too much *house* stuff. I hauled wood, took up the trash, did extra barn things, house work, laundry, hung out and chatted with Mickey in the shop, bathed two dogs, etc...I should have just called it a day. Now, I'm not patting my back because I did all those things, matter of fact, just the opposite. I'm one of those people that sometimes has a hard time relaxing. Seems there is always something that needs done. So I keep going.


This is NOT a good thing.





Anyway..So Saturday night I had planned on trying a new recipe.. Two actually..


One I will call, *Peebly Road Chicken Roll*...



These are your ingredients..





Get yourself at least one cat and one dog to hang out in the kitchen with you as you prepare this meal. It helps. Keeps you company. Besides, they wouldn't rather be anywhere else than with you. Its true..





Take a chicken breast, boneless and skinless and put it inside a baggie. Then grab your tenderizer and start pounding the chicken breast out..As you pound, you can say whatever is giving you fits....Like for instance..



POUND.





I hate taxes.


Pound.


W-2's stink.


Pound.


SO do w-3's, 1099's, receipts, diesel expense, employee wage report, quarterly reports, losses..


Pound.


Profits..


UH? Wait! NO! I love profits..


By this time your chicken will look like this, which is identical to the picture above, but hey, I'm lazy. I didn't feel like changing it..


So then..











Take a few green onions, chopped and saute them in a skillet with a little butter. Not too much just enough to make them not totally raw tasting..





Take a bar of cream cheese and grate half a jalapeno and combine with the sauteed onions.





And add some salt and pepper. I used Sea Salt and coarse pepper..No special reason, just did..





Combine into a smooth mixture..





Then spread that onto that flattened chicken breast. And then roll from thinnest end up.









In the meantime you would have been frying bacon. Two slices per breast. Plus one more..I'll tell you why later...Don't cook the bacon two crispy as it will cook more in the oven. But the one extra piece, fry pretty crisp.

Now roll two slices of bacon around each breast and hold in place with a toothpick..




Put in a baking dish and cook at 350 for 35 to 45 mins. Keep checking. Don't overcook..Cook just until the juices run clear.




Now if I would have been a *normal* person
what I should have done then was pop one of those Uncle Bens rice packets in the microwave and made a small salad and waited patiently for the chicken to bake.

But no...not me...

Like I said..I cant relax and have to make things hard..My therapist is working with me. Ha! Translated means, I really DO need a therapist. In the meantime, I do things this way.

I try another dish I have never made before. All on the same night. Not good. Not good at all.

This is what you will need to make Arroz Verde, or simply, green rice
Cilantro
Spinach leaves
Chicken broth
Milk
Olive oil
Long-grain rice
Onion
Garlic

Now I'm not going to give the recipe here, because in fact it didn't turn out as planned. I needed to add more milk along the way and there was wayyyy too much cilantro in it.

There was a lot of blending involved. And chopping and measuring and tasting and...well just too much of everything. The chicken was done 20 minutes before the rice. I was overheated. I had the kitchen windows open.


And my clean kitchen looked like this...
Oh I forgot to add I had also made a big pot of homemade dog food that day too...It was not good...It was not pretty...I really didn't even get to enjoy the dinner...Please tell me I'm not the only one in the world that has felt this way? I would love to say it all went fine, but in reality, it just didn't.
Is that chicken one for the recipe file? Yes.
Would that rice be wonderful and delicious after I fine tune it a bit? Yes.



Because through all that, I did come up with this.
Garnish the rice with some chopped fresh cilantro and that crumbled piece of bacon you cooked and some teeny tiny pineapple chunks.
I'm sure it could be delicious and I do encourage you to give it a try. On a slow day, with a well rested body, and someone else to clean up the mess afterwards...
